I baked some poppy seed muffins over the weekend and they were a big hit. I was asked for the
recipe, so here it is Natalie.
3 c flour
2 1/4 c sugar
1 1/2 tsp salt
1 1/2 tsp baking powder
1 1/2 tsp vanilla
1 1/2 tsp almond extract
3 eggs
1 1/8 c vegetable oil
1 1/2 c milk
2 Tbsp poppy seeds
Blend dry ingredients in large bowl. Beat eggs a little and add liquid ingredients and poppy seeds to dry mixture. Stir only til moistened. Too much stirring makes them tough. Spoon into well greased or paper lined muffin tins. Fill almost full. Bake at 350 degrees for 30 to 35 minutes. Yield: 24 Freezes well
