Cream together:
Add:

1 cup margerine at room temperature
3/4 cup brown sugar
3/4 cup white sugar
1 egg
1 tsp vanilla
Mix well.
Mix in:
1 1/2 cups flour
1 1/2 cups flour
1 tsp baking soda
1/8 tsp salt
Add:
3 cups oatmeal
Mix again.
Bake at 350 degrees for about 12 minutes. Makes about 3 dozen.
Do you have a Silpat? It's worth the money. I highly recommend them.
Pretty darned good. Don't you just feel like baking when the weather starts cooling down? Or is it just me?

That came about when I was a kid... went to grandma's and she said I could bake them!!! But she was out of vanilla... and I didn't know it till I got to it... SOOOO she said pick another flavoring and have fun... SO I DID...
And Lemon Oatmeal cookies were born!!! If you like lemon... give it a try!!! :D

I love that yummy last pic! I love your red mixer too ;-) I have a confession. I made some cookies to mail the to the in-laws and then couldn't find a proper container. The last I sent to them broke. So....I ate them. Oh, can't bake without my Silpat!
