Mimi Sue's Cottage

A home is much more than a house built of lumber, brick, or stone. A home is made of love, sacrifice, and respect. We are responsible for the homes we build. We must build wisely, for eternity is not a short voyage. There will be calm and wind, sunlight and shadows, joy and sorrow. But if we really try, our home can be a bit of heaven here on earth. Cakes!

Here are the recipes for the crockpot cakes.  Some crockpots cook hotter than others so be sure you keep an eye on them the first time you make these recipes.  You may need to adjust the cooking time.  Just a little warning.

These are great when you don't have an oven (when you're remodeling your kitchen), or when the oven's full of something else.

Chocolate Cake

1 (12 oz) bag semisweet chocolate chips
1 (3.4 oz) package instant chocolate pudding mix
1 cup sour cream
1 box chocolate cake mix, batter prepared according
to package directions
butter flavored cooking spray
Vanilla ice cream, for serving

Stir the chocolate chips, pudding mix, and sour cream into the prepared cake batter.  Spray a 3 qt or larger slow cooker with cooking spray, and then pour the batter into it.  Cover and cook on high for about 2 hours, and then stir well.  Cover and cook on high for another 1 1/2 hours or until the dessert is mostly set in the middle and firm around the edges.  The top and middle will still be a little gooey.  Turn off the slow cooker and let it sit for at least 30 minutes.  The dessert will have the consistency of a bread pudding.  Spoon it into bowls and serve with vanilla ice cream.  Makes 8-10 servings

Lemon Cake

1 (12 oz) bag white chocolate chips
1 (3.4 oz) package instant lemon pudding mix
1 cup sour cream
1 box lemon cake mix, batter prepared according
to package directions
butter flavored cooking spray
vanilla ice cream, for serving

For the lemon cake I sometimes make a sauce made of the juice of one lemon and enough powdered sugar to be able to drizzle the icing over the cake and ice cream.

Enjoy!

Yummy. I think you should just make me the lemon one because I am too lazy to make my own. I would have to put down my crochet hook and knitting needles.

Grams lazy? Ha. she's just resting in between room remodles or ER visits! LOL
But all of that aside, I think you should make ME the lemon one! hehehehe
I'm such a crockpot kind of girl. Thanks for sharing these recipes with all of us in blog land!
Cuz someday these will be passed around all across the net like the N.M. cookies, and everyone will have a story of how their aunt pirated a copy of the recipe and how they now make these cakes for all of their family gatherings:-)
( hope you don't think I'm making light....cuz I'm not. I think it's so awesome that these are in ME's book, and one is all yours! wahoo! wahoot Waoooooot! )
(however, maybe about now you're way glad I don't live next door to you...lol)
Enjoy

They both sound divine. I'm going to try them today! Thanks for the "easy inspiration." By the way, how 'bout that sun? Huh? Huh? Awesome!

How cool is that?! These go in the "to try" file, since today is the first day of my "try not to eat sugar diet".

Yum! Thanks for these great recipes. I love to use my crock-pot but usually it's just vegetables or meat! Now, the good stuff can be made in it! Hooray!

This sounds so good, I think I need to give one of them a try, maybe tommorow after church. Thanks for inviting me to your upcoming activity. I'm going to try and be brave and come :) Let me know what time. Our house is in the coldisac, it's the smaller rambler.
