Mimi Sue's Cottage

A home is much more than a house built of lumber, brick, or stone. A home is made of love, sacrifice, and respect. We are responsible for the homes we build. We must build wisely, for eternity is not a short voyage. There will be calm and wind, sunlight and shadows, joy and sorrow. But if we really try, our home can be a bit of heaven here on earth. Summer Picnic Salad

Just in time for this weekend's picnics or barbque. This coleslaw tastes just like the one they serve at KFC. Super easy if you buy a bag of already shredded cabbage.

Coleslaw

1 bag or 6 cups shredded cabbage
1/4 cup grated carrot
2 tbsp grated yellow onion (optional)

Dressing:

1/2 cup mayonaise
1/2 cup sour cream
1/2 cup sugar
2 tbsp vegetable oil
2 tbsp vinegar (I use rice vinegar)
1 tsp salt

Mix well all dressing ingredients (I shake it up in a mason jar)

Add about 1/4 cup to cabbage/carrot mixture. Don't use too much dressing, after sitting for awhile it gets too wet. Dressing recipe makes enough for about 5 salads.

It tastes even better served in a vintage Iron King bowl;)

I have that fabric! I know the post was about the salad, but when you have FAN-FREAKIN-TASTIC FABRIC underneath, well, just expect the salad to take second place. We're sooooo soul mates. Just sayin'.

This sounds so yummy on these hot Summer evenings. I love coleslaw but hesitate to make it or order it because of the calories. With your recipe I can manage those by using light or non fat items!
