Mimi Sue's Cottage

A home is much more than a house built of lumber, brick, or stone. A home is made of love, sacrifice, and respect. We are responsible for the homes we build. We must build wisely, for eternity is not a short voyage. There will be calm and wind, sunlight and shadows, joy and sorrow. But if we really try, our home can be a bit of heaven here on earth. A New Recipe

One of my favorite appliances is the slow cooker. When my kids were young I must have used this baby once or twice a week. One of my neighbors gave me this recipe for a sweet pork very similar to the one that they serve at Cafe Rio. You can spoon it over rice or use it as a filling for burritos. I think they use it in a tostada like salad at Cafe Rio.
Put a medium size pork roast, 1 chopped onion, juice of 1 lime, 2 cloves garlic, 2 cups salsa, 1 cup brown sugar, and salt and pepper in your crock pot. Cook on high for about 5 hours or until you can pull the meat apart with 2 forks.

Sounds good! I use my crock pot a lot, mostly in the winter.
