Mimi Sue's Cottage

A home is much more than a house built of lumber, brick, or stone. A home is made of love, sacrifice, and respect. We are responsible for the homes we build. We must build wisely, for eternity is not a short voyage. There will be calm and wind, sunlight and shadows, joy and sorrow. But if we really try, our home can be a bit of heaven here on earth. Zucchini Cakes

We never plant zucchinis in our vegetable garden because we usually get plenty from our neighbors.

They are always more than happy to share!

I have recipes for zucchini cake and zucchini muffins that my family loves.

We like to eat them raw with ranch dressing or in a salad.
Sometimes I slice them and saute them in
a little butter and olive oil with a few thinly sliced onions.  Delicious with some fresh parmesan
cheese sprinkled over the top.

I'm always on the lookout for new summer squash recipes so when
I found this on Pinterest, I decided to give it a try.  Although I did
tweak it just a little.

Zucchini Cakes

1 large grated zucchini (patted dry in a paper towel)
1/2 cup grated parmesan cheese
1 cup panko bread crumbs
1 egg
1/4 tsp paprika
1 clove minced garlic
2-3 shakes of hot sauce
salt and pepper
1-2 Tbsp olive oil

Mix all ingredients except olive oil.  Form into patties.
Fry in olive oil until golden brown.
