Mimi Sue's Cottage

A home is much more than a house built of lumber, brick, or stone. A home is made of love, sacrifice, and respect. We are responsible for the homes we build. We must build wisely, for eternity is not a short voyage. There will be calm and wind, sunlight and shadows, joy and sorrow. But if we really try, our home can be a bit of heaven here on earth. Poppy Seed Muffins

I baked some poppy seed muffins over the weekend and they were a big hit. I was asked for the

recipe, so here it is Natalie.

3 c flour

2 1/4 c sugar

1 1/2 tsp salt

1 1/2 tsp baking powder

1 1/2 tsp vanilla

1 1/2 tsp almond extract

3 eggs

1 1/8 c vegetable oil

1 1/2 c milk

2 Tbsp poppy seeds

Blend dry ingredients in large bowl. Beat eggs a little and add liquid ingredients and poppy seeds to dry mixture. Stir only til moistened. Too much stirring makes them tough. Spoon into well greased or paper lined muffin tins. Fill almost full. Bake at 350 degrees for 30 to 35 minutes. Yield: 24 Freezes well
