Soup Weather

It's been cold and snowy here in Utah so a few days ago I decided to make some beef and barley soup. It's delicious and fairly nutritious and freezes well. It should have been made in a bigger pot. Beef and Barley Soup
2 lbs lean ground beef or ground turkey
16 oz. chopped canned tomatoes
1 cup V8 or tomato juice
7 cups water
1 cup sliced celery
1/2 cup chopped celery leaves
1 can green beans
2 tsp. garlic powder
2 Tbsp light soy sauce
1 bay leaf
1/2 tsp. paprika
1/2 tsp. dried thyme
1/2 cup pearl barley
2 potatoes, peeled and chunked
2 carrots, peeled and sliced
salt and pepper to taste
Brown meat in soup pot. Add all ingredients except carrots and potatoes. Simmer 45 minutes. Add carrots and potatoes. Cook another 15 minutes or until carrots and potatoes are done.

MMMM looks and sounds yummy! I worked out in the yard in jeans and t-shirt and got a little warm today here in South Texas! I do think it is supposed to be cooler tomorrow.

I wish I could reach through the screen and have that cup of soup. It looks so delicious. You would probably be in danger of my not giving that RED cup back though ;-)
