Oh Fudge

The very first thing you do is put your mini marshmallows in the freezer. You should keep them there for at least 4 hours or til they're pretty well frozen. Then you get out your grandma's candy making pot that's probably toxic but NOTHING burns when you cook in it.
Then you gather your ingredients...


And chop your nuts...

Rocky Road Fudge
Over medium heat
melt 3/4 cup butter or margerine in large heavy pan
add 3 cups sugar, stir til disolved
add 2/3 cup evaporated milk
bring to a boil, stirring constantly
boil another 5 minutes, just keep stirring
remove from heat and add
1 12 oz pkg semi sweet chocolate chips
stir until melted then add
1 7 oz jar marshmallow creme
1 tsp vanilla
stir until well blended
fold in 1 cup chopped nuts (I used walnuts)
take marshmallows out of freezer and sprinkle about 1 1/2 cups evenly over 9 X 13 inch pan
(I used a cookie sheet which makes the fudge not as thick)
pour warm fudge mixture over marshmallows
do not stir or you'll melt them!

Try not to eat half the pan all by yourself. You could put them in a cute little box or cellophane bag and take some to your neighbors for a sweet Valentine treat.

Oh my goodness does that look good. I just might have to give it a try and share some Valentine sweetness with some of my neighbors. Thanks for posting the recipe!! WA_HOO!!! I feel as if I have been told the greatest secret of the entire universe! I had no idea you needed to freeze the marshmallows! I always wondered how other people’s marshmallows didn’t melt!!!(Oh my heck, I’m such a lurp LOL) Thank you thank you thank you for sharing this “secret” with us! I have a pot luck this afternoon; I’m so gettin out my toxic pan and makin some rock-ee road fudge :-)
DH called from the store the other day (don’t ya love cell phones?) n said he was getting a bunch of artichokes; they were a “fair” price. My fair and his fair are not the same. They were almost $2 each, and they were micro tiny bitty little things. But the GS’s were so delighted when Grandpa showed up with them, that I would have paid even more for the darn things! Did you ever get tired of them when you lived in CA? Thanks again for the recipe and the kind words. I enjoy the fun!

That looks so good, Mimi. I know if I made it, I WOULD eat half the batch...I love chocolate and marshmellows. I wish I had one of those big old heavy pans like that.
